The summary would show any agent acitvity

The summary contains totals, so if there are other agents enabled it may not be conclusive.
But if you search the logs you might find referneces to the out of office runs.
The easiest way to know though is what Murray suggested - if they user got a summary then the agent was enabled and disabled normally. Even if the agent did not reply to anyone the user would get a summary which will state that no OOO responses were generated. If they did not get a summary, that means the agent did not run normally.
